For industry-experienced chefs, this is a great way to attain recognisable accolades for future leadership within professional kitchens or businesses, working and living the career you have always dreamed of.
Is this the right programme?
A Chef de Partie apprenticeship is ideal for those team members looking to progress their responsibilities in the kitchen. Running a specific section of the kitchen and usually managing a small team of Commis. They will keep organised making sure that dishes go out on time, are at a high standard and the work areas remains clean and orderly.
This is a Level 3, 12 month programme plus a Gateway (EPA) of 2 months.
All our culinary apprentices are mentored by one of our top chefs to make sure they are fully prepared for their End-Point Assessment (EPA).
How it works
Apprentices receive theory and practical training from an industry expert chef trainer'
Spend 1 day a month in our Umbrella Training Culinary School in London where they will experience expert-led masterclasses in everything from butchery to pasta making.
Embed what they have learnt back into your workplace by experiencing the different sections and collating evidence of their work.
Their demonstration and evidence collecting of their work should take place as part of Off The Jobs Hours
Does your team member already have significant culinary experience?
Senior Culinary Chef Level 4 apprenticeship would be ideal for those chefs ready to create and develop new recipes, products and product lines. This apprenticeship would help them advance their skills and responsibilities and management to the highest level.
Off The Job Hours are a must in any apprenticeship. The training is equivalent to 6 hours per week (or 20% of 40 hours).
This gives learners the time to undertake studies, activities, master-classes etc. during working hours.
These include, training activity relevant to the apprenticeship standard, learning a new skill or enhancing knowledge or behaviours, and that these taking place within your normal (contracted) hours.

Practical face to face training at our Culinary School
Umbrella Training’s Culinary School is a hands-on, role-relevant experience for learners on Commis Chef, Chef de Partie and Production Chef programs. Designed for chefs from the ages of 16 years up and at levels, it hones the kitchen skills that progress exciting culinary careers.
Guided by our culinary lead alongside talented guest chefs and trainers with years of industry experience behind them, learners build skills and confidence in a supportive environment that connects with their day jobs, learning from the sector’s best.
To complete the Chef de Partie apprenticeship, the apprentice needs show evidence or pass a level 2 in English and Maths functional skills.
