Senior Culinary Chef Level 4 Apprenticeship

Do you have a chef that is ready to advance? Do they have the passion and skill to develop new recipes, products and product lines for your organisation?

Senior culinary chefs research, responsibly source, develop and launch products to meet specification briefs in line with the organisation's vision, values and objectives.

They maintain high culinary standards, oversee all food preparation and presentation to ensure quality and standards, order and maintain the inventory of food and supplies for developed dishes/menus, maintain compliance and due diligence documentation within the food safety management system to ensure a safe and hygienic kitchen, monitor food and equipment suppliers, develop recipes from scratch or brief, determine the best presentation/packaging of food, maintain or raise the profit margins on food and identify and coordinate training opportunities for staff.

Is this the right programme?  

There is a significant leadership element to this role. Your chef should already have experience in the kitchen and feel comfortable leading and developing teams, show organisational and communication skills and have excellent knowledge of food and kitchen health and safe practices.

  • This is a Level 4, 18-24 month programme plus a Gateway (EPA) of 2 months.

All our culinary apprentices are mentored by one of our top chefs to make sure they are fully prepared for their End-Point Assessment (EPA).

How it works

  • Apprentices receive theory and practical training from an industry expert chef trainer'

  • Spend 1 day a month in our Umbrella Training Culinary School in London where they will experience expert-led masterclasses in everything from butchery to pasta making. 

  • Embed what they have learnt back into your workplace by experiencing the different sections and collating evidence of their work. 

  • Their demonstration and evidence collecting of their work should take place as part of Off The Jobs Hours

Off The Job Hours are a must in any apprenticeship. The training is equivalent to 6 hours per week (or 20% of 40 hours).

This gives learners the time to undertake studies, activities, master-classes etc. during working hours.

These include, training activity relevant to the apprenticeship standard, learning a new skill or enhancing knowledge or behaviours, and that these taking place within your normal (contracted) hours.

Practical face to face training at our Culinary School

Umbrella Training’s Culinary School is a hands-on, role-relevant experience for learners on Commis Chef, Chef de Partie and Production Chef programs. Designed for chefs from the ages of 16 years up and at levels, it hones the kitchen skills that progress exciting culinary careers.

Guided by our culinary lead alongside talented guest chefs and trainers with years of industry experience behind them, learners build skills and confidence in a supportive environment that connects with their day jobs, learning from the sector’s best.

Cooking up the future of training with Metaverse Learning

Umbrella Training have partnered with Metaverse Learning to bring a brand new way of teaching. We have embedded these scenarios into our curium so that our chefs get a complete blended learning experience. The scenarios available include kitchen safety precautions to hands on prep work. 

To complete the Commis Chef apprenticeship, the apprentice needs show evidence or pass a level 1 in English and Maths functional skills.
